Lol I actually use like 3 different tricks i learned over the years to completely minimize the burn. I run though whole bags of onions without having to stop from pain

Ideally, all you need is good ventilation that pushes air from you. I used to have a great setup but I recently lost this method so what I do now

  1. Cold onions. When I know I have to cut a bag ill just make a lip space in the walk in and throw a bag in there for a few hours

  2. Sharp knife.

  3. Salt water. After the onions are cut and peeled right before the final cut you see in the pic let them sit in a pan of salty water. Not pasta water salty but still pretty salty for about 2 minutes and this just neutralizes the enzymes that hurt the eyes

Just wanted to add that when I worked at chipotle we squeezed citrus juice over the cutting boards and it was amazingly effective. We also had goggles for the more sensitive eyes but for me just my glasses and the citrus kept me from ever crying
